Um,, if you have no knife, or do not wish to fight, you treat it like a normal safety kill before the knife option was introduced. Either party can refuse the fight, for lack of knife, flat out fear or because they lost a coin toss weather to knife fight or not.

$10 @ army barraks gets you a nice Cold Steel training knife like mine or blackjacks.  They have a Ka-Bar style, Blackhawk UK-SFK (basicly the new F-S dagger), and what seems to be a hunting or skinning knife.
